Ingredients
For 4 servings of sesame and flax puff pastries, you will need:
- 250 g of puff pastry (preferably yeast-based);
- 2 tsp sugar (about 16 g);
- 1 egg;
- ½ tsp sesame seeds;
- ½ tsp flax seeds;
Step-by-step instructions
Divide the puff pastry into four equal pieces. Roll out each piece, fold in half, then roll out again. Cut the dough into medium-sized diamonds, triangles, or squares. Place the pieces onto a baking sheet lined with parchment paper and lightly greased with any vegetable oil.
In a separate bowl, whisk the egg with the sugar until a thick pale-yellow foam forms. Add the flax seeds and sesame seeds, mixing thoroughly. Brush the raw pastries with this mixture. Use a fork to poke several holes in each pastry so they don’t puff up unevenly.
Bake at 180°C for about 20 minutes, then turn off the oven and let the pastries «rest» for another 20 minutes with the door slightly open.
Notes:
Savory puff pastries pair well not only with flax and sesame but also with caraway seeds or hemp seeds. Sweet versions can be topped with poppy seeds or peeled pumpkin seeds. You can also make filled puff pastries using any fresh or frozen berries and nuts such as hazelnuts, almonds, or cashews.
