Ingredients
For 4 servings of this healthy beet appetizer, you will need:
- 300 g beetroot;
- 1 red onion;
- 4 garlic cloves;
- 100 g walnuts;
- 1 tsp khmeli-suneli seasoning;
- 1 tsp ground coriander;
- 1 pinch salt;
- 1 pinch black pepper;
- 1 tbsp freshly squeezed lemon juice;
- 20 g vegetable oil;
Step-by-step instructions
Wash the beetroot thoroughly under running water. Boil or bake until tender, then peel and grate finely or blend until smooth. Peel and finely chop the onion and garlic. Sauté them in vegetable oil for 3–4 minutes until softened and the sharp onion aroma is reduced.
Place the sautéed vegetables, beetroot, black pepper, coriander, khmeli-suneli, walnuts, and lemon juice into a blender. Blend for 4–5 minutes on low to medium speed until a smooth, thick mixture forms.
Using slightly damp hands, shape the mixture into small balls and arrange them on a plate or tray. Cover with plastic wrap and refrigerate for at least 1.5 hours to allow the flavors to develop and the mixture to firm up.
Before serving, garnish with pomegranate seeds and/or fresh cilantro sprigs.
