Ingredients (for 2 servings)
For prepare this salad you need:
- 1 chicken breast fillet;
- 1 medium beetroot (about 200 g);
- 1 large carrot;
- 2 medium pickled cucumbers (or fermented cucumbers);
- 2–3 garlic cloves;
- 1 tsp salt;
- 1 bunch fresh dill (about 10 sprigs);
- A pinch of black pepper (or mixed pepper);
- 1 tbsp raw pumpkin seed oil;
Step-by-step instructions
Prepare the ingredients. Wash the chicken breast, cook it in lightly salted water until tender, then let it cool and cut into small cubes or strips.
Wash the beetroot and carrot, boil until soft, peel, and cut into cubes (similar to vinaigrette salad).
Dice the pickled cucumbers into small cubes or thin strips. Chop the dill. Press the garlic through a garlic press.
Combine everything in a large bowl: chicken breast, beetroot, carrot, cucumbers, and dill. Add salt, pepper, garlic, and drizzle with pumpkin seed oil. Mix well.
Serve fresh as a light, nutritious, and flavorful alternative to classic vinaigrette.
Notes & variations
You can replace dill with parsley or cilantro, or add them together. For a spicy version, substitute pumpkin seed oil with mustard oil.
