Ingredients (Serves 3)

To prepare this salad, you need:

  • 500 g fresh soybean sprouts;
  • ½ tsp salt (sea salt or table salt);
  • 1 pinch ground black pepper;
  • ½ tsp vinegar (preferably rice vinegar or wine vinegar);
  • 1 tsp soy sauce;
  • 2 tsp cold-pressed sesame oil (white or black sesame);
  • 3 garlic cloves;
  • 1 pinch ground coriander (optional);

Step-by-step instructions

Rinse the soybean sprouts thoroughly under running water. Pour boiling water over them and let sit for 10–15 minutes to soften. Drain and rinse again.

Peel, wash, and finely chop or press the garlic cloves. Add garlic to the cooled sprouts. Season with salt, black pepper and coriander. Add vinegar, soy sauce, and sesame oil. Mix well until evenly combined.

The salad is ready to serve immediately.

Notes & Variations:

For a more intense flavor, marinate the soybean sprouts in soy sauce with a small amount of sugar before preparing the salad.

You can also enhance the dish by adding fresh chopped herbs such as dill, parsley, or cilantro, as well as thinly sliced red onion.
