Ingredients

For the most tender almond apple charlotte cake, you will need:

  • 4 eggs;
  • 200 g sugar (adjust to taste);
  • 1 pinch of salt;
  • 1 orange;
  • 100 g almond flour;
  • 150 g wheat flour;
  • 1 pinch of cinnamon;
  • 2 medium apples (preferably tart or sweet-and-sour);

Step-by-step instructions

Wash the orange, pour boiling water over it, and peel it. Grate the peel finely or blend it to make orange zest.

Wash the apples under running water and cut them into cubes or thin strips. If the skin is tough, peel it off.

In a bowl, beat the eggs with salt and sugar. Gradually add almond flour first, then wheat flour, mixing until smooth. The batter should be uniform and moderately thick, similar to medium-fat sour cream.

Grease a baking dish with oil. Place the apples on the bottom, sprinkle with orange zest and cinnamon, then pour the batter over the top.

Bake at 180°C (356°F) for 30–40 minutes. After baking, let the cake rest in the switched-off oven for a few minutes. Cool, remove from the mold, slice, and serve.

Notes
