Ingredients
For prepare 2 serves you need:
- 300 g fresh white cabbage;
- 1 small onion;
- 3 large chicken eggs;
- 3 tbsp all-purpose flour;
- 1 tsp salt;
- 2 tbsp mustard oil for frying;
How to make crispy cabbage patties
Peel and finely dice the onion. Rinse and finely chop the cabbage (you can also pulse it in a blender on low speed for 1 minute).
In a separate bowl, beat the eggs with salt. Gradually add flour while whisking constantly until the batter is smooth and lump-free.
Stir in the chopped vegetables. Let the mixture rest for about 15 minutes.
Heat mustard oil in a skillet over medium heat. Once hot, spoon the cabbage mixture onto the pan using a tablespoon or small ladle. Fry like pancakes – about 4–5 minutes on each side – until golden brown and crispy.
Tips for extra flavor:
Spice it up with black pepper, turmeric, or a pinch of khmeli-suneli. For extra softness, mix in one small grated zucchini. These patties can also be fried in sunflower oil or corn oil, but mustard oil gives them a unique taste and health boost.
