Ingredients
To prepare a tender, flavorful, and satisfying baked millet pudding, you will need:
- 1 cup millet groats;
- 1 liter milk (preferably farm-fresh milk);
- 50 g butter;
- 1 tablespoon poppy seed oil;
- ¾ teaspoon salt;
- 2 tablespoons sugar;
- 1 tablespoon raisins;
- 1 tablespoon dried apricots;
Step-by-step instructions
Rinse the raisins and dried apricots thoroughly under running water. Pour boiling water over them and let soak for 15 minutes, then drain. Cut the dried apricots into medium-sized pieces.
Wash the millet thoroughly and soak it in hot water for 15 minutes. Drain using a sieve or colander. Combine the milk with salt, sugar, melted butter, and cold-pressed poppy seed oil.
Line a baking dish with parchment paper. Spread the drained millet evenly across the bottom. Add the raisins and dried apricots on top. Pour the milk mixture over the ingredients.
Bake in a preheated oven at 190°C (375°F) for approximately 1.5 hours. If the top browns too quickly, reduce the temperature by 10–15 degrees to ensure the pudding cooks evenly without burning.
Serve the finished millet casserole dessert warm with honey, sweet condensed milk, or fruit jelly.
Notes and serving suggestions:
In addition to dried fruits, this homemade healthy millet dessert can be enriched with walnuts (whole or chopped), poppy seeds, almonds, cashews, and hazelnuts. Butter may also be partially or completely replaced with almond oil or pumpkin seed oil. This increases the nutritional value, enhances the flavor, and makes the dish even more beneficial for overall health.
A wide selection of raw nuts, seeds, and artisan cold-pressed oils is always available from the Ukrainian natural foods store CraftOil.
