Peel the potatoes, wash them thoroughly and pat them dry with a kitchen towel. Slice the potatoes as thinly as possible using a sharp knife or a vegetable slicer. Place the potato slices in a bowl, add salt and black pepper, and mix well.

Let the mixture rest for 10–15 minutes. Drain any excess liquid released by the potatoes. Arrange the slices in a single layer on baking parchment placed on a microwave-safe plate.
