Features of high-oleic oils
High-oleic oil is a vegetable oil produced from special (mostly hybrid) seed varieties. Most often, this label refers to high-oleic sunflower oil, which has a superior fatty acid composition compared to conventional vegetable fats and is as close as possible to natural olive oil.
While the concentration of oleic acid in refined sunflower oil usually does not exceed 70%, high-oleic sunflower oil can contain 80% or even up to 90% oleic acid.
Omega-9 is not produced by the human body, but it plays an important role in many metabolic processes. It helps reduce the level of “bad” cholesterol in the blood, participates in the formation of cell membranes, and supports the skin’s hydrolipid balance.
Oil rich in oleic acid has high oxidative stability and is ideal for baking, stewing, and deep frying. It does not smoke easily, does not foam, and heats slowly without losing its properties.
Besides sunflower oil, other high-oleic oils include avocado oil and camellia oil. Recently, a new rapeseed variety has also been developed, making it possible to produce oil rich in omega-9. However, it is not yet widely used on an industrial scale due to its demanding growing conditions.
It is worth noting that oleic acid is naturally present in different amounts in all unrefined vegetable oils. Such oils can be purchased or produced independently. All you need is a special oil press, a suitable container, and high-quality raw materials — grains or seeds of oil crops that have not been treated with preservatives or agricultural pesticides.
