Ingredients

For this easy almond and bell pepper salad recipe, you will need:

  • 200 g sweet bell pepper;
  • 2 sprigs of parsley;
  • 4 green onion stalks;

For the salad dressing:

  • 1 garlic clove;
  • 5 pitted black olives;
  • 5 pitted green olives;
  • 1 tablespoon almonds;
  • 3 tablespoons olive oil;
  • 1 pinch of sugar;
  • ½ teaspoon salt;

Step-by-step preparation

Wash the sweet bell pepper thoroughly under running water. Cut it in half lengthwise, remove the seeds and stem, and slice it into medium-sized strips (not too thin). Wash the parsley and green onions, then finely chop them. Place all ingredients into a salad bowl.

Prepare the dressing in a separate container. Peel and wash the garlic clove, then crush it using a garlic press or finely chop it with a knife. Grind the almonds in a mortar. Cut the olives and black olives into medium pieces. Combine them with the almonds and chopped garlic, then add olive oil, salt, and sugar.

Let the dressing sit for 15–20 minutes to allow the flavors to blend. After that, pour it over the sweet pepper and herb mixture.

The fresh bell pepper almond salad is ready to serve immediately after preparation.

Notes:

Besides parsley and green onions, you can add dill, cilantro, and/or basil to this salad. For a more intense flavor, replace olive oil with mustard oil or black cumin seed oil.
