Ingredients for chicken gizzards in sour cream
For prepare you need:
- 500 g chicken gizzards;
- 1 tbsp CraftOil corn oil;
- 20–30 g fresh ginger root;
- 1 large clove garlic;
- 1 medium carrot;
- 1 onion;
- 150 g sour cream (preferably homemade);
- 2 tbsp grated horseradish root;
- 2 pickled cucumbers;
- 1 tsp salt;
Step-by-step cooking instructions
Rinse the chicken gizzards thoroughly under running water. Boil in salted water for about 40 minutes. Let them cool, then cut into medium-sized pieces. Grate or finely blend pickled cucumbers. Grate ginger and horseradish as well.
Peel and chop onion, carrot, and garlic as for sautéing. Fry in corn oil until golden and aromatic. Add the cooked gizzards, stir, cover, and simmer over low heat for 20 minutes. Add sour cream, grated ginger, horseradish, and pickled cucumbers. Mix well and cook for another 15 minutes.
Remove from heat and serve. Delicious with potatoes, rice, porridge, or dumplings.
Tips & notes
For freshness and flavor, sprinkle with finely chopped herbs before serving. Instead of corn oil, you can also use sunflower, sesame, or camelina oil. To add a spicy touch, mix in 1 tsp black cumin seed oil 5 minutes before cooking is complete.
