Ingredients (for watermelon rind jam with almonds)
For prepare you need:
- 1.5 kg of watermelon rinds;
- 200 g of almonds;
- 0.5 kg of sugar;
- 1 bunch of mint;
Step-by-step recipe
Wash the watermelon rinds thoroughly and carefully peel off the thin green skin. Cut the rinds into medium-sized pieces (about 1.5 cm thick).
Place the chopped rinds in a clean pot with a thick bottom. Add sugar, cover with a lid, and let it sit for 1–1.5 hours until the rinds release juice.
Put the pot on low heat and simmer for 1 hour, stirring occasionally. Add almonds and cook for another hour. The watermelon rinds should turn almost transparent, while the syrup becomes thick and rich.
Wash the mint leaves, dry them with a kitchen towel, wrap in cheesecloth, and dip into the jam for 15 minutes. Remove the mint and pour the jam into sterilized jars. Seal for long-term storage or let it cool and keep refrigerated.
Notes:
To get 1.5 kg of rinds, you’ll need a 4.5–5 kg watermelon. Instead of almonds, you can also use hazelnuts or peanuts.
