Ingredients

To prepare this delicious and filling cheese appetizer, you will need:

  • 2/3 cup cream cheese;
  • 2/3 cup feta cheese (crumbled or mashed with a fork);
  • 1 tablespoon dried mint;
  • 1 bunch of dill (8–10 stems);
  • 3 tablespoons water;
  • 1 tablespoon olive oil;
  • 1 medium-sized lemon;
  • ½ teaspoon ground black pepper;
  • 1 slightly less than full teaspoon salt;

Step-by-step preparation

Wash the dill, pat it dry with a kitchen towel, and finely chop it. It is best to use only young, tender shoots, removing thick and tough stems.

Rinse the lemon under running water, pour boiling water over it, then remove the peel with a vegetable peeler and chop it as finely as possible.

Place the cream cheese, water, and olive oil into a blender and blend for 1–2 minutes until smooth. Add the feta cheese, dried mint, chopped dill, salt, pepper, and lemon zest. Blend again at low speed for about 2–3 minutes.

Transfer the finished mixture into a storage container, cover with a lid, and refrigerate for a couple of hours so it can cool and become thicker.

Notes:

This cheese appetizer pairs perfectly with buckwheat bread, rye bread, toast, and grilled vegetables. For a more intense and spicy flavor, add a little chili along with black pepper and replace olive oil with black cumin oil.
