Ingredients
To make this creamy homemade rice pudding with ginger for 5 servings, you will need:
- 3 tbsp rice (preferably short- or medium-grain rice);
- 500 ml milk;
- 150 g water;
- 1 egg yolk;
- 1 tbsp butter;
- 2 tbsp sugar;
- 2 tbsp starch (potato or cornstarch);
- 1 pinch of salt;
- ½ tsp dried ground ginger;
How to make rice pudding with ginger
First, rinse the rice thoroughly. Place it in a saucepan, add the water and salt, and cook until the rice is tender.
In a separate bowl, combine the egg yolk, melted butter, sugar, ground ginger, and 400 ml of milk. Whisk the mixture until it becomes smooth and slightly foamy.
Pour the remaining 100 ml of milk into another bowl and mix it with the starch until completely dissolved. Make sure there are no lumps.
Next, combine the starch-and-milk mixture with the cooked rice, and then gradually add the milk-and-egg mixture. Cook everything over low heat for approximately 15 minutes, stirring regularly.
Divide the pudding between individual ramekins or heatproof serving dishes. Bake at 200°C (392°F) for approximately 15–20 minutes.
After baking, allow the pudding to rest for about 10 minutes before serving. This gives the dessert time to set and develop its creamy texture.
This homemade rice pudding is delicious both warm and chilled. For an attractive presentation, garnish it with a sprig of fresh mint, powdered sugar, or decorative confectionery sprinkles.
Tips and notes:
For the best texture, it is recommended to use unpolished, non-parboiled rice. If desired, add a small amount of almond flour during preparation. It will make the pudding even more aromatic, nutritious, and satisfying.
Almond flour, dried ginger, and many other natural ingredients are available from the Ukrainian online store CraftOil.
