Ingredients
For prepare you need (іerves 4):
- 200 g amaranth seeds;
- 200 g water;
- 200 g whole milk (recommended);
- 30 g butter;
- 1/3 tsp salt;
- 1 tsp sugar;
Step-by-step recipe for nutritious amaranth porridge
Place amaranth seeds in a fine sieve or a colander lined with cheesecloth and rinse thoroughly until the water runs clear.
Transfer the seeds to a heavy-bottomed saucepan or pot and add water. Bring to a boil, then add salt and sugar. Reduce heat to low.
In a separate pot, heat (or bring to a boil) the milk.
Once the amaranth has swollen (about 5 minutes of cooking), add the warm milk, stir, and simmer on the lowest heat for another 30 minutes.
Stir in the butter, remove from heat, and let it rest. Serve warm — although it’s also tasty when chilled.
Notes & variations
You can enhance amaranth porridge with dried fruits, nuts, fresh seasonal berries, or fruit slices. It’s also delicious with sweet syrup or light jam. For a richer aroma, substitute butter with almond or poppy seed oil.
