Pumpkin seed oil is used to marinate the tomatoes. It is a source of unsaturated fatty acids, vitamins, and minerals that support the body’s normal functioning. It contains up to 60% omega-6 fatty acids and approximately 30% omega-9 fatty acids, as well as palmitic and stearic acids, B vitamins (B1, B2, and B6), tocopherols, and a variety of minerals, including magnesium, selenium, iron, and calcium. Pumpkin seed oil also contains cucurbitin, a biologically active compound traditionally associated with antiparasitic properties.
This plant-based oil has a pleasant, nutty aroma and a mild, delicate flavor, making it an excellent choice for vegetable marinades.
CraftOil offers fresh, unrefined, artisan pumpkin seed oil produced using cold-pressing technology on our own branded presses. Ingredients
For 2 servings of spicy pickled tomatoes, you will need:
- 1 medium onion;
- 4 medium or 5 small tomatoes;
- 2 garlic cloves;
- 1 tablespoon salt;
- ½ teaspoon ground black pepper;
- 3 tablespoons pumpkin seed oil;
Step-by-step instructions
First, prepare the ingredients. Peel the onion, rinse it under running water, pat it dry with a paper towel, and cut it into rings or half-rings, as preferred. Wash the tomatoes and cut them into moderately thick wedges. Peel the garlic and slice it thinly or mince it using your preferred method.
Layer the onion, tomatoes, and garlic in a container or another airtight dish. Season with salt and black pepper, then drizzle with raw pumpkin seed oil. Close the container tightly and shake it gently to combine the ingredients. Place it in the refrigerator for 8–10 hours to allow the flavors to develop.
Once marinated, the tomatoes are ready to serve! If desired, garnish them with finely chopped fresh dill, parsley, or basil. Dried herbs can also be used if fresh herbs are unavailable.
