Chicken and vegetables are a winning duo — meals made with them are always flavorful, healthy, and wonderfully aromatic. If you don’t like spending too much time in the kitchen, you’ll love this quick and easy chicken with zucchini recipe in a pan. This simple yet elegant dish is perfect for lunch, dinner, or even a festive table.
For frying, it’s best to use raw sunflower oil, as it has a high smoke point, doesn’t go rancid when heated, and has a mild, neutral taste that doesn’t overpower the flavor of the chicken or vegetables.
TM CraftOil offers natural, aromatic, and highly nutritious sunflower oil, produced on their own press from eco-friendly sunflower seeds certified for quality.
CraftOil’s oil is rich in vitamin E, a powerful antioxidant that protects the body from free radicals, which can trigger inflammation and increase the risk of cancer. It also contains unsaturated fatty acids (oleic and linoleic), which support lipid metabolism and help regulate visceral fat levels.
In addition to sunflower oil, the CraftOil catalog features roasted sunflower seeds, the «Perfect frying set», and other healthy products. Visit our website to explore the full range of natural oils and wholesome foods.
Ingredients for chicken with zucchini in a pan (2 servings)
For prepare you need:
- 300 g of chicken thighs or fillet (any part will work);
- 1 medium carrot (about 80 g);
- 1 small zucchini (about 300 g);
- 1 teaspoon of salt;
- 1 large onion (about 100 g);
- 1 tablespoon of sunflower oil;
- 1 garlic clove;
- A pinch of ground black pepper (optional);
Step-by-step cooking instructions
Prepare the chicken: wash the thighs or drumsticks, remove the meat from the bones, and cut it into small pieces. If you’re using chicken fillet, slice it thinly. Season with salt and pepper, then let it marinate for a few minutes.
Chop the vegetables: peel the onion, carrot, and garlic. Slice them as you would for a stir-fry. Garlic can be pressed or finely minced. Wash the zucchini and cut it into cubes or half-rings — not too small. If the skin is tough, peel it off, for older zucchini, remove the seeds as well.
Fry the chicken: heat a pan over medium heat, pour in the CraftOil sunflower oil, and once it’s hot, add the chicken. Fry for 10–15 minutes until golden brown.
Add vegetables: add the onion, carrot, and garlic to the chicken, stir, and sauté for another 15 minutes. When the onion turns golden-orange and gives off a pleasant aroma, add the zucchini.
Simmer until tender: cover the pan and cook for another 10–15 minutes, stirring occasionally.
