Ingredients for spicy onion spread:
- 100 grams of cold-pressed walnut oil;
- 40 grams of tomato paste;
- 1 kg of yellow onions;
- 1 bunch of fresh dill (about 12–15 stems);
- 1 tablespoon of salt;
- 1 teaspoon of «Khmel-Suneli» spice blend;
Step-by-step preparation
Peel and rinse the onions, then chop them as if for sautéing. Wash the dill, let it dry, and finely chop it.
Heat the walnut oil in a frying pan. Once hot, add the onions and sauté over medium heat, stirring occasionally, for about 15 minutes until they become golden and aromatic.
Stir in the tomato paste, salt, and «Khmel-Suneli» seasoning. Cover the pan and cook for another 15 minutes on low heat.
Add the chopped dill, stir, and let the mixture cook on minimum heat for about 20 more minutes. Remove from heat and let it cool to room temperature.
Once cooled, puree the mixture in a blender or pass it through a meat grinder twice until smooth.
Serve: The onion spread is best served chilled, but it can also be enjoyed warm.
Tips and notes:
For a more aromatic version, add a teaspoon of cold-pressed black cumin seed oil or whole black cumin seeds.
