The unique ability of honey to resist spoilage is explained by the specific physical and chemical composition of this natural product. Honey contains very little water, has high acidity, and is rich in antibacterial and antiseptic compounds.
When bees produce honey, they remove almost all moisture from nectar, leaving no more than 15–20% water. This low moisture content makes it impossible for bacteria, fungi, and microorganisms to live and multiply.
In addition, honey contains hydrogen peroxide, which forms during enzymatic fermentation, as well as gluconic acid that creates an acidic environment (pH 3–4). These components act as natural preservatives, blocking the growth and activity of harmful microorganisms.
Laboratory studies of 3,000-year-old honey have confirmed that it retained its valuable properties and is still safe for consumption.
However, only high-quality, properly harvested honey can truly be considered “immortal.” If honey is extracted too early, its moisture content may exceed 20%, leading to fermentation.
