Chicken wings are more than just a treat – they’re a real gourmet experience loved by kids and adults alike. If you bake them instead of frying, after marinating in a fragrant French mustard sauce, you’ll get a dish that’s not only spicy and flavorful but also healthy.
This version of baked chicken wings contains very little fat – just 233 kcal per 100 grams – making it ideal even for those carefully watching their diet or counting calories.
Adding black mustard seeds (also known as French mustard) to the marinade gives the wings a delicate, refined aroma and a pleasant, mild taste without any overpowering sharpness. Mustard seeds are packed with vitamins C, E, A, K, and B3 (PP), along with a rich blend of minerals like potassium, calcium, iron, phosphorus, magnesium, manganese, selenium, and zinc. They also contain pectins, natural enzymes, and unsaturated fatty acids that help regulate lipid levels in the body.
Consuming mustard seeds, as well as mustard flour and cold-pressed mustard oil, helps suppress inflammation, supports the digestive system, boosts fat metabolism, and strengthens the immune system.
CraftOil – a trusted producer of flavorful, artisan oils – offers a wide and regularly updated range of products. Their catalog includes black, white, and yellow mustard seeds, along with cold-pressed mustard oil, all made in-house using certified presses. Ingredients
For 2 portions of these savory, satisfying, yet low-calorie mustard baked chicken wings, you’ll need:
- 0.5 kg (1 lb) chicken wings;
- 3 tbsp freshly squeezed lemon juice;
- 3 tbsp black mustard seeds;
- 1 tsp salt;
- 2 tbsp olive oil;
- 1 tsp ground black pepper;
- 1 clove of garlic;
Step-by-step instructions
Rinse the wings and pat them dry with a kitchen towel. Remove any feather remnants if visible. Optionally, you can separate each wing at the joints.
Crush the mustard seeds using a mortar and pestle or a spice grinder. Peel and press the garlic clove.
In a mixing bowl, combine olive oil, lemon juice, salt, pepper, garlic, and crushed mustard seeds. Mix well to create the marinade.
Rub the marinade thoroughly into the chicken wings, cover the bowl with a lid or plastic wrap, and refrigerate for 2 hours.
Preheat the oven to 180°C (356°F). Line a baking tray with parchment paper and place the marinated wings on it.
Bake for about 30 minutes until golden and fully cooked. Serve hot, optionally garnished with chopped herbs.
Serving tip:
These wings pair perfectly with a dipping sauce made from Greek yogurt, chopped herbs, garlic, and a dash of mustard oil.
