Casseroles are a real lifesaver for home cooks—they can be made with whatever you have in your fridge. One delicious and incredibly healthy option is a cottage cheese casserole with pumpkin seed flour. This gluten-free ingredient is packed with fiber, omega-3 and omega-6 fatty acids, as well as vitamins A, K, C, PP, and B-group vitamins. It also contains essential minerals like magnesium, calcium, potassium, iron, selenium, and zinc.
Adding pumpkin seed flour to your diet helps cleanse the body of parasites, including pinworms and even tapeworms. It also balances stomach acidity (relieving heartburn and burping), promotes healthy bowel movements, and improves overall well-being.
Since pumpkin seed flour is gluten-free, it’s ideal for people with gluten intolerance. Moreover, it helps lower blood sugar levels, making it a great choice for diabetics or those at risk of diabetes.

Ingredients for the perfect pumpkin seed casserole
To prepare a delicious casserole, you need:
- 500 g (17.6 oz) cottage cheese;
- 200 g (7 oz) pumpkin seed flour;
- 3 eggs;
- 3 tbsp sugar;
- 1 packet vanilla sugar or pure vanilla;
- 100 g (3.5 oz) raisins (or prunes);
Step-by-step instructions
Rinse the raisins under cold water, soak in boiling water for 5 minutes, then drain. Beat the eggs, sugar, and vanilla until a thick, pale foam forms. Add cottage cheese and mash thoroughly with a fork until smooth — no lumps. Gradually mix in the pumpkin seed flour, stirring constantly until you get a moderately thick, uniform dough.
Add the soaked raisins and combine evenly. Transfer the mixture to a butter-greased baking dish. Bake at 150°C (300°F) for 80–90 minutes until golden brown and fragrant.
Optional add-ins for extra flavor
To make the casserole even more nutritious and tasty, consider adding cashews, almonds, or a bit of poppy seeds. You’ll find a great selection of nuts, seeds, and grains at CraftOil—a Ukrainian store offering only the best in natural foods and certified oil pressing equipment.
