Ingredients
To prepare this light vegetable salad (4 servings) you will need:
- 500 g red cabbage (about ½ medium head);
- 2 medium apples (sour or sweet-sour);
- 1 small horseradish root;
- 100 g vinegar + 1 teaspoon (preferably 9%);
- 1 teaspoon salt;
- 150 ml water;
- 3 tablespoons pumpkin seed oil;
Step-by-step preparation
Prepare the ingredients. Wash the cabbage, pat it dry with a clean towel, and finely shred it.
Then gently massage the cabbage with your hands and let it rest for 10–15 minutes. Wash the apples under running water, peel them if the skin is thick, remove the cores, and cut them into small cubes. Sprinkle them with 1 teaspoon of vinegar to prevent browning. Wash the horseradish root, peel it, and grate it on a fine grater.
In a saucepan, mix water and salt and bring the mixture to a boil. Then add 100 g of vinegar and pour the hot marinade over the cabbage. Let the cabbage cool completely, then squeeze out the excess liquid.
Combine the marinated cabbage with apple cubes and grated horseradish, then dress the salad with cold-pressed pumpkin seed oil. The salad is ready to eat immediately after preparation.
Before serving, you can garnish it with finely chopped herbs or microgreens.
Notes:
