Ingredients

To make lavash rolls with cheese and mushrooms, you will need:

  • 2 sheets of lavash bread;
  • 300 g mushrooms (any variety);
  • 1 medium onion;
  • 1 slightly incomplete tablespoon sunflower oil;
  • 1 teaspoon salt;
  • 1 processed cheese;
  • 2 tablespoons cream (can be replaced with sour cream);
  • 1 bunch of dill (8–10 stems);
  • 50 g hard cheese (any variety);

Step-by-step preparation

First, prepare the filling. Peel the onion, wash it, and slice it into half rings or small pieces for frying. Sauté it in sunflower oil for 10–15 minutes until golden. Wash the mushrooms, slice or dice them, add to the onion, and simmer for about 20 minutes.

Then add the processed cheese cut into medium pieces, pour in the cream, add salt, mix well, and cook over very low heat for about 30 minutes. After that, let the filling cool for 30–40 minutes.

Grate the hard cheese or chop it as finely as possible. Wash the dill, pat it dry, and finely chop it.

Unroll the lavash sheets, spread the cheese and mushroom mixture evenly over them, sprinkle with grated hard cheese and dill, then roll them up and cut into portions. Before serving, the rolls can be garnished with finely chopped herbs.

Notes:

In addition to sunflower oil, you can use corn oil, camelina oil, or mustard oil for frying. If you sauté the onions and mushrooms in mustard oil, the dish will gain an especially spicy and aromatic flavor.
