Ingredients

To make this fragrant and incredibly delicious strawberry almond flour pie, you will need:

  • 125 g (½ cup) unsalted butter, softened;
  • 1 cup granulated sugar;
  • 2 eggs;
  • 2 cups all-purpose flour;
  • ½ cup almond flour;
  • 2 teaspoons baking powder;
  • 800 g (about 1¾ lb) fresh strawberries;
  • ½ cup almonds, roughly crushed;

Step-by-step instructions

Remove the stems from the strawberries, wash them thoroughly, and allow them to drain completely. If the berries are large, cut them in half.

Beat the eggs with the sugar until the mixture becomes light, fluffy and pale. Add the softened butter (do not melt it) and mix until smooth. In a separate bowl, combine the all-purpose flour, almond flour, and baking powder. Sift the dry ingredients twice to create a lighter texture.

Gradually fold the dry ingredients into the egg mixture while stirring continuously. The dough should become thick and elastic.
