Cheesecake is a popular curd-based dessert and one of the true highlights of Greek cuisine. It is believed that the first cheesecake recipe appeared more than 4,000 years ago — long before the discovery of America. If you slightly deviate from the classic recipe by adding almonds, you will get not only an exceptionally delicious dessert but also a healthy almond cheesecake. Ingredients

To make a delicate almond cheesecake, you will need:

  • 150 g all-purpose flour;
  • 2 eggs;
  • 200–220 g full-fat cottage cheese;
  • 60 g butter;
  • 70 g cream;
  • 100 g sugar;
  • 1 handful of sweet almonds;

Step-by-step almond cheesecake recipe

Soften the butter using a water bath or microwave. It should be soft but not melted. Separate one egg into yolk and white. Combine the yolk with the second egg and sugar, then beat until smooth. Using a mixer, blend the egg-sugar mixture with the butter. Gradually add the flour in portions, stirring continuously. You should end up with a moderately dense and elastic dough. Let it rest for 10–15 minutes.

Meanwhile, combine the cottage cheese with the cream and mix thoroughly until all lumps are completely dissolved.

Grease a baking pan with butter. Place the dough into the pan and evenly distribute it across the bottom and sides. Add the cheesecake filling, then sprinkle the almonds on top.

Bake the cheesecake for about 30 minutes at 160°C (320°F), then for another 15–20 minutes at 140°C (285°F). Let the cake rest and cool slightly before serving. Slice into portions and, if desired, dust with powdered sugar.

Notes:
