Pickled watermelon with allspice can be eaten as soon as the watermelon has absorbed the salt and seasonings, or it can be preserved for the winter. This type of home canning is quick and easy to prepare and does not require any special storage conditions.

Adding allspice to the watermelon marinade gives the appetizer distinctive spicy notes, enhances its aroma, and can also add beneficial compounds associated with the spice.

Allspice contains essential-oil compounds such as cineole and eugenol, which are known for their antimicrobial properties. It also contains vitamin C, as well as B-group vitamins that are involved in the normal functioning of the nervous system and brain. Allspice also contains tannins and other naturally occurring compounds.

Ingredients

To make pickled watermelon slices in one 3-liter (approximately 3-quart) jar, you will need:

  • 1 small watermelon;
  • 1.5 liters (6¼ cups) of water;
  • 2 tablespoons salt;
  • 3 tablespoons sugar;
  • 1 teaspoon citric acid (or freshly squeezed juice of 1 lemon);
  • 5 garlic cloves;
  • 6 whole allspice berries;

Step-by-step instructions

Wash a 3-liter jar thoroughly and sterilize it. Rinse the watermelon, remove the stem end, and cut the watermelon into moderately sized slices. Arrange the slices tightly in the prepared jar.

Peel the garlic cloves, wash them, cut each clove into 2–3 pieces, and add them to the jar. Bring the water to a boil, then carefully pour it over the watermelon. Leave it to stand for 6–7 minutes.

Pour the water back into a saucepan and use it to prepare the marinade. Add the salt, sugar, lemon juice or citric acid, and whole allspice berries. Bring the marinade to a boil and simmer for several minutes. Pour the hot marinade over the watermelon, then seal the jar.

Turn the jar upside down, wrap it in a towel or blanket, and leave it in this position for 24 hours. Once completely cooled, the canned pickled watermelon can be stored at room temperature.

Notes:

For a more intensely spiced appetizer, add a few blackcurrant leaves and a pinch of black pepper to the marinade along with the allspice. Like many other spices, black pepper is also available from the Ukrainian online store CraftOil.
