What can you use instead of butter?

A great solution is to replace it with vegetable oils such as sunflower oil, corn oil, camelina oil, olive oil, or mustard oil. Butter is also frequently added to dough for sweet and savory baked goods. It can be replaced with vegetable fat, using about ¾ of the volume of melted butter. For rich pastries, poppy seed oil and/or almond oil work well, while for pizza dough, savory rolls, and similar recipes, walnut oil, pumpkin seed oil, or hemp oil are excellent options.
Another common substitute is margarine. However, it should only be used if it does not contain hydrogenated fats (trans fats), since heating them produces harmful (sometimes toxic) compounds that may trigger inflammation and weaken the immune system.
In yeast-free dough, butter can be replaced with mashed avocado in a 1:1 ratio. The best option is ripe Hass avocados, which have a rich flavor and high fat content.
For sandwiches with cheese, sausage, or fish, butter can be replaced with a thin layer of vegetable oil applied with a silicone kitchen brush.
