In the western regions of Ukraine, mushroom oil is traditionally used for frying and stewing, and is also served as an accompaniment to roasts or porridge — poured into a small dish and sprinkled with fresh herbs. Mushroom oil can also be used to prepare so-called «fried sandwiches»: slices of baguette or white bread are toasted in the oil until golden, then topped with any spread or pâté of your choice.

In addition, mushroom oil is considered one of the best vinaigrette salad dressings, making the flavors of beans and beets richer and giving the dish a refined, aromatic touch.

Classic mushroom oil recipe

Mushroom oil is easy to prepare at home. No special culinary skills or rare, exotic ingredients are required. As a base, it’s best to use a vegetable oil without a strong aroma or pronounced taste — for example, camelina oil, corn oil, sunflower oil, or olive oil.

For 200 grams of oil, you will need at least 20 grams of dried mushrooms. Grind the mushrooms, add them to a container with the oil, mix well or shake thoroughly, and place the mixture in a dark place for 2.5 – 3 weeks.

For those who don’t want to wait that long, mushroom oil can be prepared using a «hot» method. Heat the vegetable oil to almost 100°C (212°F), then combine it with crushed dried mushrooms. However, only oils with a high smoke point are suitable for this method, as they do not degrade during heat treatment.

You can use any type of mushroom or a mix of different varieties. In addition, it’s recommended to add dried herbs such as basil, parsley, dill, cilantro, thyme, and others.

For fans of spicy, bold flavors, ground black pepper, allspice, and black cumin (Nigella seeds) can also be added.

Naturally, the quality of the base oil directly affects not only the taste and aroma, but also the nutritional value and health benefits of the mushroom oil. For best results, use raw, 100% natural oils that contain no preservatives, colorants, emulsifiers, or other chemical additives.
