Sauces and seasonings are essential elements of any cuisine. Without them, even the most filling and nutritious dishes would taste bland and unappealing. They enhance flavor, improve texture, and transform everyday meals into true culinary masterpieces.

One of the most popular condiments today is sesame sauce — a thick, creamy dressing with a fresh aroma and a delicate nutty flavor. In its countries of origin, Japan and China, it is commonly known as tahini and is made from roasted sesame seeds.

A 100-gram serving contains approximately 975 mg of calcium, which nearly covers the daily requirement for an adult. Sesame-based sauce contains more calcium than many dairy products, including hard cheeses and cottage cheese, traditionally considered primary calcium sources.

How to use sesame paste (Tahini)

Tahini

Sesame paste (tahini) is one of the most versatile condiments in cooking. It is widely used in sushi and rolls. Perfect for vegetable salads, especially seaweed salads like chukka. Pairs widely used rice dishes, including pilaf. Often served with meat, poultry, and seafood in European cuisine

In Japan, tahini is even added to shiitake mushrooms and sweet rice wine. Sesame is considered a «food of youth» due to the presence of sesamin, a powerful antioxidant that helps slow aging processes.

In China, sesame sauce is often mixed with peanut butter and soy sauce to create a rich dressing for vegetable and meat dishes.
