The first attempt was a complete failure. The sauce had an unpleasant smell and an awful taste, so the mixture was stored in a cellar and forgotten.

Nearly two years later, the chemists accidentally rediscovered the container. During storage, the sauce had naturally fermented, transforming into an incredibly flavorful condiment with a rich, balanced taste.

The original Lea & Perrins Worcestershire Sauce is traditionally made with fermented anchovies, onions, garlic, molasses, tamarind, vinegar, and a carefully guarded blend of spices. Even today, the exact original recipe remains a closely protected secret.

Modern homemade versions typically combine soy sauce, apple cider vinegar, chili peppers, ginger, garlic, onions, and aromatic spices to achieve a similar sweet, savory, tangy, and umami-rich flavor.

Homemade Worcestershire sauce recipe

Although reproducing the authentic recipe at home is difficult, this simplified homemade Worcestershire sauce recipe delivers an excellent balance of flavor and aroma.

Ingredients:

  • 500 ml apple cider vinegar;
  • 100 ml soy sauce;
  • 100 g dark molasses;
  • 4 anchovy fillets;
  • 4 garlic cloves;
  • 1 onion;
  • 1 teaspoon ground ginger;
  • 1 teaspoon chili powder;
  • ½ teaspoon ground black pepper;
  • ½ teaspoon ground cardamom;
  • ½ teaspoon ground cinnamon;
  • 2 tablespoons brown sugar;
  • 1 tablespoon sesame oil;

Finely chop the onion and garlic. Heat the sesame oil in a saucepan and sauté the onion and garlic over medium heat for about 15 minutes until golden.

Add the anchovy fillets and continue cooking while stirring for another 10–15 minutes. Next, add the molasses, soy sauce, apple cider vinegar, brown sugar, ground ginger, chili powder, black pepper, cardamom, and cinnamon. Mix thoroughly, cover the saucepan, and simmer gently for about 30 minutes.

Allow the sauce to cool completely, then blend until smooth using a blender or food processor. Transfer the finished sauce to a clean glass container and store it in the refrigerator.

Worcestershire sauce has a thick consistency, a deep reddish-brown color, and a remarkably complex flavor profile. It combines sweetness, acidity, saltiness, mild heat, and rich umami notes.

It pairs perfectly with beef, pork, lamb, and poultry, grilled and roasted meats, seafood and freshwater fish, mushroom soups, fish soup and chowders, stews, vegetable salads, marinades and barbecue sauces, burgers and steaks.
