Ingredients

To prepare flavorful country style potatoes (4 servings), you will need:

  • 1 kg (2.2 lb) potatoes;
  • 1.5 L water;
  • 2 tsp paprika;
  • ½ tsp ground turmeric;
  • ½ tsp ground black pepper;
  • 2 garlic cloves;
  • 2 tbsp vegetable oil;
  • 1 heaping tsp salt;

Step-by-step instructions

Wash the potatoes thoroughly under running water and cut them into thick wedges. Peeling is optional. Peel the garlic and either crush it using a garlic press or finely mince it.

Bring the water to a boil in a large pot. Add the potato wedges and cook over medium heat for about 4 minutes. Drain well in a colander and allow them to cool and dry slightly. Mix the cooled potatoes with the garlic, salt, paprika, turmeric and black pepper until evenly coated.

Heat the vegetable oil in a frying pan and cook the potatoes for about 10 minutes, turning occasionally, until they develop a crispy golden-brown crust.

Serve immediately while hot. If desired, garnish with freshly chopped herbs.

Recipe tips:

If you enjoy bold and spicy flavors, add fresh or dried onion along with the garlic, and replace regular salt with Svanetian salt for a richer taste. For a healthier version with less oil, lightly coat the potato wedges with vegetable oil and bake them in a preheated oven at 200°C (400°F) for 15–20 minutes, or until crispy and golden.
