Ingredients for creamy, aromatic almond mousse (melts in your mouth)
To prepare the mousse you need:
- 500 ml of heavy cream;
- 1 packet of vanilla;
- ½ tsp salt;
- 4 egg whites;
- 120 g sugar;
- 25 g dark chocolate (about ¼ of a bar);
- 125 g raw almond oil;
- 6–7 whole almonds;
Step-by-step instructions
Lightly crush the almonds in a mortar. Beat the egg whites with the salt and vanilla until a thick, white foam forms. Gradually add the cream and sugar, and mix thoroughly.
Melt the chocolate using a water bath or microwave (on defrost mode), then combine it with the almond oil.
Gently fold the cream-egg mixture into the chocolate-oil blend. Whip the mixture until it thickens.
Pour into serving dishes (ramekins or dessert bowls work great), and refrigerate for 30–40 minutes.
Before serving, sprinkle with crushed almonds for garnish.
