Braised mushrooms in sour cream sauce are a true autumn delicacy that even the most discerning gourmet will find hard to resist. Ingredients
To make tender and aromatic mushrooms in sour cream sauce (3 servings), you will need:
- 300 g mushrooms (any variety);
- 150 g sour cream;
- 1 medium-small onion;
- 2 tbsp vegetable oil, for frying;
- 1 tsp salt;
- ½ tsp ground black pepper;
- ¾–1 tsp ground fenugreek;
Step-by-step instructions
If using store-bought oyster mushrooms, rinse them under running water, allow them to drain, and cut them into medium-sized pieces.
If using wild mushrooms, clean them thoroughly, wash them carefully, and boil them in salted water for approximately 20 minutes. Drain them well in a colander before cooking. Peel and rinse the onion, then slice it into rings, half-rings, or thin strips, depending on your preference.
Heat the vegetable oil over medium heat and sauté the onion for approximately 15 minutes, until it becomes golden and develops a pleasant, characteristic aroma. Add the mushrooms to the onion. Season with salt and black pepper, sprinkle with fenugreek, and mix thoroughly. Reduce the heat to low and simmer.
Store-bought mushrooms will generally be ready after about 10 minutes, while wild mushrooms may require approximately 30 minutes, depending on the variety and previous preparation.
Next, add the sour cream and mix everything thoroughly. Continue cooking over low heat for approximately 20 minutes.
Remove the pan from the heat and let the dish rest for another 15 minutes. This allows the flavors to blend and the sauce to thicken slightly. Serve the braised mushrooms in sour cream sauce warm as a side dish or as a flavorful vegetarian main course.
Notes:
If desired, garnish the mushrooms with finely chopped fresh dill or parsley.
