Salad with young cabbage

Ingredients (Serves 3):

250 g young white cabbage (about half of a medium head);

  • 1 small cucumber;
  • 6–7 green onion stalks;
  • 5–6 sprigs of fresh dill;
  • 1 lemon;
  • ½ teaspoon sugar;
  • 1 teaspoon salt;
  • 2 tablespoons corn oil (or more, to taste);

Step-by-step instructions

Wash the cabbage thoroughly under running water, then finely shred it.  Wash and chop the green onions and dill. If the dill stems are tough, use only the soft leaves and young shoots.

Wash the cucumber, trim both ends, and cut it into cubes, slices, or half-moons as desired. If the skin is thick, you may peel it.  Wash the lemon, pour boiling water over it, and cut it in half. Use one half for the salad and squeeze out the juice (by hand or with a citrus press).

In a deep bowl, combine cabbage, cucumber and chopped greens. Add lemon juice, salt, sugar and corn oil. Mix thoroughly and serve immediately.

You can also add fresh parsley or celery (both leaves and grated root). This salad works well with other healthy oils such as pumpkin seed oil or hazelnut oil. Perfect as a light spring salad, diet-friendly meal, or healthy detox recipe.
