Spices and seasonings are an essential part of any modern kitchen. They give dishes a distinctive taste and aroma, act as natural preservatives, and offer significant health benefits. Many herbs and spices help boost metabolism and serve as effective immune modulators and anti-inflammatory agents.

One popular yet recently underrated seasoning is Svaneti salt — a true highlight of Georgian cuisine. It is considered part of the country’s intangible cultural heritage and is even included in the UNESCO registry. The name of this spice comes from the region where it was created — Svaneti, a mountainous area where locals historically faced a shortage of regular table salt and sought ways to extend it.

Interesting facts about Svaneti salt

Svaneti spice

There are two main types of Svaneti salt: dry and wet. The dry version has a long shelf life and can be added to meat, fish, and vegetable dishes.  The wet version has a richer flavor and aroma with a slightly dense texture.

Svaneti salt was once nicknamed «cosmic salt» because NASA studied it as a potential food product for astronauts.

Five years ago, the popular American publication Gourmet Magazine referred to Svaneti salt as the «truffle salt of Georgia», praising its unique flavor and aroma.

The original recipe includes a «secret» ingredient — gitsruli, also known as wild cumin. This rare plant grows only on the high mountain slopes of Svaneti. Modern producers often replace it with ground seeds of kalonji (black cumin).
