Patties are a beloved meat dish and a true gem of Odessa cuisine. Few people know that their origins trace back to France. In Ukraine, patties only started gaining popularity in the mid-18th century. Originally, they were small, round cutlets made from finely chopped meat.

Today, to save time and effort, modern home cooks prepare patties using ground meat. Add a bit of butter and whole mustard seeds, and you get a juicy, flavorful, hearty, and healthy dish.

Chicken patties

A dietary version of this dish includes patties made from chicken breast and classic yellow mustard seeds. Ingredients (makes 4 servings of juicy, melt-in-your-mouth chicken patties)

To make the meat balls, you need:

  • 400 g chicken breast;
  • 6–8 stalks of green onion;
  • 1 large onion;
  • 1.5 tbsp melted butter;
  • 2 tsp yellow mustard seeds;
  • 1/3 tsp ground black pepper;
  • 1 tsp salt;
  • 1 egg;
  • 1 heaping tbsp flour;

Step-by-Step Cooking Instructions

Rinse the chicken breast, cut into chunks, and blend in a food processor for 2–3 minutes at medium speed.

Peel and finely chop the onion. Wash and chop the green onions.

Crush the mustard seeds in a mortar. Mix them with salt and black pepper.

Beat the egg until a light foam forms, then combine it with the mustard seed mixture.

Add the melted butter, both types of onion, and the egg-spice mix to the ground chicken. Mix everything thoroughly and let the mixture rest for 10 minutes.

Form small patties by hand, coat each generously in flour, and place them on a baking tray lined with parchment paper.

Bake the patties at 180°C (356°F) for about 1 hour. Serve hot.

Tips & Notes:

To make the patties even more tender, you can add grated and well-drained zucchini to the chicken mixture. Instead of butter, feel free to use corn oil or camelina oil. Adding mustard oil directly into the ground meat gives the patties a bold and piquant flavor.
