Baked pork ribs are more than just a meat delicacy — they’re a hearty, flavorful, and surprisingly nutritious dish. With the perfect balance of fat and tender meat, plus a rich blend of spices, these juicy oven-baked ribs turn out incredibly soft and melt-in-your-mouth delicious.
If you cook the ribs with mustard powder, the result is so tender and flavorful that it resembles classic BBQ meat — just without the smoky flavor. Ground mustard seeds add a subtle spicy note, enhance tenderness, and significantly boost the nutritional value of the dish.
Mustard powder contains vitamins A, E, C, B-complex, and PP, as well as essential minerals such as magnesium, iron, potassium, and calcium. It is also rich in phytoncides — natural antiseptic compounds that help stimulate the immune system.
Regular consumption of mustard powder may help boost metabolism, improve digestion and reduce bloating or intestinal discomfort, normalize blood circulation and support healthy blood pressure levels.

Ingredients for juicy oven-baked ribs
To prepare tender and flavorful pork ribs in the oven, you will need:
- 1 kg (2.2 lb) pork ribs;
- 1 slightly incomplete tablespoon salt;
- 1 slightly incomplete tablespoon sugar;
- 1 tablespoon ground paprika;
- 1 teaspoon ground chili pepper;
- 1 teaspoon cumin;
- 2 teaspoons ground dried garlic;
- 2 teaspoons ground dried onion;
- 1 full teaspoon mustard powder;
- 1 teaspoon ground black pepper;
- 1 full tablespoon ketchup;
Step-by-step cooking instructions
Rinse the pork ribs thoroughly under running water and pat them dry with a kitchen towel or paper towels. If there is a membrane on the ribs, remove it for better texture.
In a separate bowl, combine all the spices: mustard powder, salt, sugar, black pepper, dried garlic, dried onion, cumin, paprika and chili. Rub the spice mixture thoroughly into the meat. Roll the ribs into a tight shape, wrap them in plastic wrap, and refrigerate for at least 1 hour (preferably 2–2.5 hours) to marinate.
After marinating, wrap the ribs tightly in three layers of foil. Place them on a baking sheet and bake for 90–100 minutes in a preheated oven at 150°C (300°F).
Check doneness with a bamboo skewer. If it pierces the meat easily, carefully unwrap the foil, increase the oven temperature to 180°C (350°F), brush the ribs with ketchup, and bake for another 20 minutes until nicely browned.
Serve the ribs hot. Optionally garnish with freshly chopped herbs and/or sliced onions.
Tips for extra flavor
For even more aroma, add a pinch of black cumin powder to the spice blend. You can also mix the ketchup with an additional teaspoon of mustard powder before glazing the ribs for a deeper, spicier flavor.
