Cabbage pancakes are a light vegetable appetizer and a delicious side dish for meat and fish. For those who, for various reasons, do not eat pork, beef, chicken, turkey, or other meat, these cabbage fritters make a wonderful alternative to traditional meat patties. They are quick and easy to prepare and are sure to turn out well even for those who do not consider themselves particularly talented in the kitchen.

Cabbage pancakes

For frying cabbage pancakes, sesame oil is an excellent choice. It is suitable for cooking and has a delicate, pleasant aroma with subtle nutty notes. Sesame oil contains sesamin, sesamolin, and sesamol — antioxidant compounds that help protect the body from oxidative stress caused by free radicals. It also contains calcium and potassium, minerals that play important roles in maintaining bones, connective tissues, hair, eyelashes, nails, and tooth enamel.

In addition, sesame oil contains up to 47% linoleic acid and up to 42% oleic acid. These fatty acids are important for maintaining healthy cholesterol levels, supporting the normal function and elasticity of blood vessels, and contributing to proper lipid metabolism.

Sesame oil for cabbage pancakes

Adding freshly ground black pepper gives these savory cabbage pancakes a pleasantly spicy flavor. Black pepper contains piperine, a biologically active compound with antimicrobial properties, as well as B vitamins, which are involved in the normal functioning of the nervous system and brain.

Ingredients

To make juicy, tender cabbage pancakes that melt in your mouth, you will need the following ingredients for 4 servings:

  • ½ medium head of cabbage;
  • 4–6 sprigs of fresh dill or parsley;
  • 4 eggs;
  • 4 tablespoons all-purpose flour;
  • ½ teaspoon ground black pepper;
  • 1 teaspoon salt;
  • 2 tablespoons sesame oil;

Step-by-step instructions

Rinse the cabbage under running water and cut the head in half. Set one half aside, as you will not need it for this recipe. Finely grate the remaining half using a vegetable grater, or chop it as finely as possible with a knife. Wash the dill and finely chop it as well.

In a bowl, whisk the eggs together with the salt and ground black pepper. Add the chopped cabbage and dill or parsley, then add the flour and mix everything thoroughly. The mixture should have a consistency similar to pancake or fritter batter.

Heat a frying pan and add the sesame oil. Spoon small portions of the cabbage batter into the hot pan, forming individual cabbage fritters. Fry over medium heat for approximately 7–9 minutes on each side, or until the pancakes are golden brown and cooked through.

Serve the cabbage pancakes hot. If desired, top them with sour cream or mayonnaise and sprinkle with finely chopped fresh herbs.

Notes:

For beautifully golden vegetable fritters, add a small amount of turmeric to the batter. Turmeric gives the cabbage pancakes an appetizing golden color and adds extra flavor. Turmeric, along with many other spices and seasonings, is always available to order from the CraftOil online store.
