Ingredients
For 2 servings, You will need:
- 500 g (1 lb) fresh green beans;
- 1 tbsp salt;
- 1 cup vinegar (apple cider vinegar is recommended);
- 1½ tbsp vegetable oil;
- 1 tsp whole black peppercorns;
- 1 tbsp dill seeds;
- 1 tbsp sugar;
- 2 garlic cloves;
How to make pickled green beans
Wash the green beans thoroughly under running water and trim the stem ends. If the beans are long, cut them in half. Blanch them in boiling water for 1–2 minutes, then immediately transfer them to cold water. Drain well and pat dry with paper towels.
Peel the garlic cloves, rinse them, dry them, and slice them into thin pieces.
To prepare the marinade, combine the vinegar, salt, sugar, dill seeds, and vegetable oil in a saucepan. Bring the mixture to a boil, then remove it from the heat immediately.
Place the prepared green beans, black peppercorns, and garlic slices into sterilized jars. Pour the hot marinade over the vegetables until completely covered. Seal the jars tightly.
The pickled green beans will be ready to enjoy after approximately 6–7 hours of marinating.
For long-term storage, process the jars according to your preferred canning method. After sealing, turn the jars upside down and wrap them in a blanket or towel for about 10 hours before storing them in a cool, dark place.
Tips:
For the best flavor and stability, use a vegetable oil with a high smoke point in the marinade, such as sesame oil, corn oil, sunflower oil, or camelina oil.
