In addition, fat can act as an effective preservative. It coats the surface of vegetables and root crops, limiting their exposure to air and thereby helping slow down oxidation.

Three secrets to choosing the right oil for canning

To make sure your oil-based preserves remain safe and delicious, it is important to choose the right oil for canning. In particular:

  • Choose oils with a high smoke point. Oils suitable for preserving vegetables include corn, sunflower, camelina, and sesame oils. This is particularly relevant because vegetable marinades are boiled, while jars filled with raw vegetables may be sterilized during the canning process;
  • Match the oil to the vegetables and flavor profile. Corn and camelina oils pair especially well with cucumber and/or sweet bell pepper salads because they have a relatively neutral taste and a light, subtle aroma. Spicy appetizers such as Ogonyok («Little Fire») or eggplant sauté are better prepared with sunflower or sesame oil, which complement their spicy character without overpowering the aroma of herbs and seasonings;
  • Consider unrefined oils. Contrary to a common belief, some home preservers prefer unrefined, non-deodorized oils rather than highly refined oils when making homemade preserves. Unrefined oils retain more of their natural characteristics and contain no added foreign ingredients. Refining is an industrial process used to purify vegetable oils and may involve heating the oil to 70°C (158°F) or higher. When oil is subjected to additional high temperatures during boiling or sterilization, its chemical composition can change and potentially lead to the formation of undesirable compounds;
