Spices and seasonings have been used in cooking for thousands of years. They are added to soups and main courses, gravies and appetizers, sauces and marinades, and are also widely used for preserving and fermenting various foods. One of the best-known and most popular spices is paprika — a bright red powder with a distinctive sweet and mildly spicy aroma and a delicate, piquant flavor.

Interestingly, paprika is not a single type of pepper but rather a group of pepper varieties, including both hot peppers and sweet bell peppers. Every cuisine around the world has its own traditions and methods of preparing and using paprika.

Originally, peppers were grown exclusively as ornamental plants. Christopher Columbus brought them to Europe and called them «Indian salt», as the indigenous peoples of the Americas used dried pepper mixtures as a substitute for salt, which was extremely rare and therefore expensive at the time.

However, paprika gained its greatest fame in Hungary, where it arrived in the 16th century during the period of Ottoman rule. Hungarian paprika is made from eight varieties of pepper and is an essential ingredient in one of Hungary’s most famous national dishes — paprikash.

Health benefits of paprika

Ground paprika

Paprika is an exceptionally nutritious spice that contains many compounds and nutrients important for human health. In the 1930s, Hungarian scientist Albert Szent-Györgyi discovered a high concentration of ascorbic acid (vitamin C) in peppers. He was awarded the Nobel Prize for his research into vitamin C and other biological processes.

Paprika also contains:

  • B vitamins, especially vitamin B6, which are essential for the normal functioning of the central nervous system and brain. Vitamin B6 is involved in the production of hemoglobin as well as neurotransmitters such as serotonin, dopamine, norepinephrine, and GABA, which play an important role in mood and emotional well-being;
  • Vitamin A, which is necessary for the production of rhodopsin, a pigment in the retina responsible for low-light vision. Vitamin A also helps maintain the health of the mucous membranes of the mouth and respiratory tract, which serve as an important first-line barrier against pathogens;
  • Vitamin K, which plays a key role in normal blood clotting and contributes to calcium metabolism. Calcium, in turn, is essential for maintaining healthy bones and cartilage;
  • Vitamin E, a fat-soluble antioxidant that helps protect cells from oxidative stress and free-radical damage;

In addition, paprika contains varying amounts of magnesium, zinc, phosphorus, potassium, and iron — minerals that contribute to the normal functioning of many organs and systems in the human body.

How to use paprika and what it pairs with

Paprika has a relatively mild flavor and aroma compared with many other spices, making it an extremely versatile seasoning. It pairs wonderfully with vegetables, root vegetables, meat, and many other foods.

Paprika can be added to vegetable and meat stews, as well as marinades for pork, turkey, beef, and veal. This spice is particularly good at enhancing the flavor of shashlik, grilled meat, and barbecue dishes.

In Europe, paprika is often used when preparing white fish. It is also commonly sprinkled over cheese platters served with white wine.

Smoked paprika can transform a familiar omelet, scrambled eggs, or shakshuka into a truly impressive dish, adding a rich smoky aroma and a distinctive savory flavor.

Another traditional dish that is difficult to imagine without this spice is Hungarian spiced lard — smoked pork fat seasoned with paprika and other spices, featuring a rich, savory aroma and a spicy, piquant taste.

In recent years, paprika has also become increasingly popular among pastry chefs. It is added to chocolate desserts, brownies, mousses, and other sweet creations. Paprika gives desserts distinctive sweet-and-spicy notes and can enhance the overall flavor profile.
