Ingredients (for 4 servings)
For prepare you will need:
- 500 ml water or vegetable broth;
- 300 g fresh greens (optionally including nettle);
- 1 large onion;
- 4 medium potatoes;
- 1 carrot;
- 2 garlic cloves;
- 10–12 green onion stalks;
- 2 tbsp sesame oil;
- 1 tsp salt;
- ½ tsp red pepper;
Step-by-step preparation
Peel and wash the potatoes and carrot. Dice them and boil in salted water or broth for 10–15 minutes until almost tender. Peel, wash, and chop the onion and garlic. Sauté them in sesame oil for about 20 minutes until golden.
Rinse the nettle under running water, then pour boiling water over it and finely chop. Wash and chop the green onions and other herbs as desired. Add the sautéed mixture to the pot with vegetables, then add the greens and red pepper.
Stir well and simmer on medium heat for another 15 minutes. Serve hot.
Notes:
This soup is traditionally served with sour cream or homemade mayonnaise. For a more filling meal, add half of a soft- or hard-boiled egg to each serving. This is a light, dietary dish, perfect for those looking to lose weight in a healthy way.
