Liver salads are not only incredibly delicious but also highly beneficial for your health. Beef, chicken, turkey, and pork liver are rich in iron and vitamin B12, which play a key role in blood formation and help prevent anemia and low blood pressure. Liver also contains choline, an essential nutrient that supports brain cognitive function and the proper functioning of the central nervous system.
Adding walnuts to the salad significantly increases its nutritional value, gives it a pleasant crunchy texture, and enhances its health benefits. Walnut kernels are rich in iodine, which supports proper thyroid function, and omega-3 fatty acids, which contribute to lipid metabolism and help reduce inflammation in the body.
In 100 grams of walnuts, there are about 6.7 grams of fiber, which improves digestion and supports healthy bowel function. Additionally, digesting walnuts requires energy, so moderate consumption can help with weight management and prevent excess weight gain.
CraftOil offers fresh, 100% natural, premium-quality shelled walnuts that are carefully stored under optimal conditions and certified for quality. This artisanal product is perfect for salads, as well as meat, fish, and vegetable dishes, and also works great as a healthy snack.
Ingredients (liver salad with walnuts recipe)
To prepare a hearty and delicious liver salad, you will need:
- 500 g liver (beef, chicken, or turkey);
- 400 g potatoes;
- 200 g pickled or marinated cucumbers;
- 4–5 sprigs of dill or parsley (optional);
- 50 g walnuts;
- ½ tsp salt;
- A pinch of ground black pepper;
- 1 tbsp mayonnaise;
Step-by-step instructions
Wash the liver thoroughly, remove any membranes, and boil it in salted water until fully cooked. Cooking time depends on the type: beef liver: about 30 minutes, chicken, duck, or goose liver: about 15 minutes.
Wash the potatoes and boil them in their skins for about 20 minutes over medium heat. Once the liver has cooled, cut it into strips or cubes. Peel the cooled potatoes and cut them into medium-sized pieces. Slice the cucumbers into half-rings or slices.
Wash and finely chop the herbs.
Assemble the salad: in a deep bowl, combine the chopped liver, potatoes, cucumbers, herbs, and lightly crushed walnuts, add salt, pepper, and mayonnaise. Mix well and serve.
Notes (healthy cooking tips):
For the best flavor and health benefits, use homemade mayonnaise. It is ideal to prepare it with natural cold-pressed oils such as flaxseed oil, sesame oil, corn oil, chia seed oil, or camelina oil.
