To make this light and aromatic vegetable salad, you’ll need:
- 600 g salted or pickled tomatoes;
- 2 salted cucumbers;
- 1 onion;
- 6–7 sprigs of parsley;
- ½ tsp cumin seeds (or crushed black cumin);
- 1 tsp vegetable oil (for dressing);
Step-by-step preparation
Slice the tomatoes and cucumbers into medium-thick rounds. Choose firm, meaty tomatoes so they keep their shape after cutting. Peel and rinse the onion, then cut it into rings or half-rings. If using salted rather than pickled vegetables, you can marinate the onion briefly in 9% vinegar.
