Turkish Delight is the true gem of Middle Eastern cuisine. Since it was first crafted in the late 18th century by a confectioner named Ali Muhiddin Hacı Bekir, this iconic sweet has become a staple on both festive and everyday tables across modern Turkey and the Arab Emirates. Originally named rahat-ul-lukum, the name evolved over time into its current form: lokum or Turkish delight.

Turkish delight with almond flour

Almond Turkish Delight is not only incredibly tasty but also very healthy. Whole almonds and almond flour are rich in magnesium, which supports the cardiovascular system, as well as unsaturated fatty acids that help reduce inflammation, lower «bad» cholesterol, and slow down the aging process.

Ingredients for almond Turkish delight

You need:

  • 3 cups sugar;
  • 6 cups water;
  • 3 cups starch (preferably cornstarch);
  • ½ cup whole almonds;
  • ½ cup almond powder (or almond flour);

How to make it – step-by-step instructions

Dissolve the starch in half of the cold water, stirring until no lumps remain. Let the mixture rest for 20–30 minutes.

Meanwhile, pour the sugar and the remaining 3 cups of water into a saucepan with a thick bottom and bring to a boil while stirring continuously. Skim off any foam that forms.

Once boiling, add the soaked starch to the syrup over low heat. Continue stirring and cook until the mixture thickens (around 20–25 minutes).

Carefully remove the thickened mixture from the pot. With wet hands, shape it into a slab about 3 cm thick.

Let it cool completely, then cut it into small cubes or diamond shapes.

Coat each piece with almond flour and garnish with whole almonds.

Notes:

For best results, use cornstarch instead of potato starch. You can also coat the Turkish delight in shredded coconut or powdered sugar. For decoration, feel free to use peanuts, cashews, or your favorite nuts.
