Ingredients
To make these flavorful lightly salted cucumbers, you will need:
- 1.5 kg cucumbers, preferably small ones;
- 1.3–1.5 liters water;
- 2 heads of garlic;
- 2 heaping tablespoons Adyghe salt;
- 10–12 sprigs of fresh dill;
- 10 black peppercorns;
- 1 teaspoon honey (optional; sugar can be used instead);
Step-by-step preparation
Thoroughly wash the cucumbers under running water and trim off the ends. Separate the garlic bulbs into individual cloves, peel them, and wash them as well. Cut large cloves in half. Wash the dill and chop it fairly coarsely.
Place the cucumbers, dill, black peppercorns, and garlic into a thoroughly washed and preferably sterilized jar.
In a separate container, combine the water, Adyghe salt, and honey. Stir until the salt and honey have completely dissolved. Pour the resulting brine over the cucumbers. Close the jar with a plastic lid and leave it at room temperature for 2 days, shaking the jar once or twice a day.
Store the lightly salted cucumbers in the main compartment of the refrigerator.
When serving, the cucumbers can be cut into wedges or thin strips and sprinkled with finely chopped parsley, dill, or cilantro. Another option is to make a simple cucumber salad by combining the pickles with finely chopped onion and dressing them with any vegetable oil of your choice.
