Ingredients
Soy hummus with sesame (4 servings):
- 4 slightly incomplete cups of soybeans;
- 2 cups of sesame seeds;
- 100 g vegetable oil;
- ½ head of garlic;
- ½ tsp ground black pepper;
- ½ tsp ground hot chili pepper;
- 1 tsp salt;
Step-by-step preparation
Rinse the soybeans thoroughly under running water, then soak them for 2–3 hours. After soaking, boil the soybeans in salted water until fully cooked. Drain and allow to cool.
Combine the cooked soybeans with sesame seeds and blend using a blender at low speed until smooth. Add vegetable oil, black pepper, chili pepper, and peeled garlic pressed through a garlic press.
Mix thoroughly and place the hummus in the refrigerator for 1–1.5 hours to allow the flavors to develop.
Serve the finished soy sesame hummus spread on whole-grain bread or rye bread. Optionally, sprinkle with finely chopped fresh herbs such as dill or parsley.
Notes:
In addition to soybeans, hummus can also be made from beans or other legumes. For a more spicy and aromatic flavor, we recommend using mustard oil or black cumin seed oil.
