Ingredients

For prepare you will need:

  • 100 g cashews;
  • 200 g mushrooms (preferably button mushrooms/champignons);
  • 100 ml water or vegetable broth;
  • 3 garlic cloves;
  • 2 tbsp sunflower oil;
  • 1 tsp salt;
  • ½ tsp ground black pepper;
  • 1 tbsp fresh lemon juice;
  • 100 ml plant-based cream (or dairy-free cream);

Step-by-step instructions

Soak cashews in cold water for 4 hours or in hot water (70–80°C) for 30–40 minutes. Drain and blend until smooth. Peel, wash, and crush the garlic.

Wash and chop the mushrooms into medium pieces. Sauté mushrooms with garlic in vegetable oil until golden. Add water or broth. After 5–7 minutes, pour in the cream. Season with salt and pepper, then add lemon juice and blended cashews.

Simmer on low heat for 15 minutes. Blend the sauce again for a smoother texture and cook for another 5–6 minutes. Serve once slightly cooled.

Tips & Variations:

For a spicier flavor, sauté mushrooms and garlic in mustard oil with chili and paprika.
