This low-calorie chicken terrine recipe makes approximately 6 servings.
- 500 g chicken breast fillet;
- 300 g chicken thigh fillet;
- 1 tablespoon dry milk powder;
- 2 tablespoons soy sauce;
- ½ teaspoon ground black pepper;
- ½ teaspoon ground nutmeg;
- 1 egg;
How to make diet chicken terrine
Wash the chicken breast thoroughly under running water, pat dry, and grind it using a meat grinder or food processor until smooth. Rinse the chicken thigh fillets and cut them into cubes about 1–1.5 cm (½ inch).
Combine the ground chicken breast with the egg, soy sauce, dry milk powder, ground black pepper, and ground nutmeg. Mix thoroughly until the mixture becomes smooth and slightly sticky. Add the diced chicken thigh pieces and stir until evenly distributed. Cover the mixture and refrigerate for 1–1½ hours to allow the flavors to develop.
Line a loaf pan or baking dish with parchment paper and lightly grease it with vegetable oil. Transfer the chicken mixture into the pan, press it firmly to remove air pockets, and cover with a lid or aluminum foil.
Bake in a preheated oven at 180°C (350°F) for 40–45 minutes.
