- 500 g (1.1 lb) zucchini;
- 2 eggs;
- 100 g (¾ cup) all-purpose flour;
- ½ teaspoon salt;
- ½ teaspoon baking powder;
- 1 pinch ground black pepper;
For the topping:
- 2 large tomatoes;
- 200 g (7 oz) sausage;
- 100 g (3.5 oz) cheese;
- 2 tablespoons mayonnaise;
- 2 teaspoons dried oregano;
How to make zucchini pizza
Begin by preparing the zucchini crust. Wash and dry the zucchini thoroughly. If the skin is thick or tough, peel it using a knife or vegetable peeler. Grate the zucchini and squeeze out as much excess moisture as possible.
Transfer the grated zucchini to a large bowl and add the eggs, salt, and black pepper. Mix well, then stir in the flour and baking powder until the mixture resembles thick pancake batter.
Divide the batter into two equal portions. Spread each portion onto a lightly oiled baking tray, shaping it into a round pizza base approximately 2 cm (¾ inch) thick.
Bake in a preheated oven at 180°C (350°F) for about 20 minutes. Remove the crusts from the oven and top them with sliced tomatoes, diced or julienned sausage, grated cheese, and mayonnaise. Finish with a generous sprinkle of dried oregano seasoning.
Return the pizzas to the oven and bake for another 10 minutes, or until the cheese has melted and turned golden. Serve immediately while hot.
